Ingredients

8 pork sausages (bangers)
2 lbs Yukon Gold potatoes, peeled and quartered
4 tbsp butter
1/2 cup whole milk, warmed
2 large onions, thinly sliced
2 tbsp vegetable oil
2 tbsp all-purpose flour
2 cups beef stock
1 tsp Worcestershire sauce
1 tsp fresh thyme leaves
Salt and black pepper to taste

Instructions

Place potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook for 15-20 minutes until fork-tender.
Meanwhile, heat oil in a large skillet over medium heat. Add sausages and cook for 12-15 minutes, turning occasionally until golden brown and cooked through. Remove and keep warm.
In the same skillet, add sliced onions and cook for 8-10 minutes until caramelized and golden brown.
Sprinkle flour over onions and cook for 1 minute, stirring constantly.
Gradually whisk in beef stock, Worcestershire sauce, and thyme. Simmer for 5-8 minutes until thickened. Season with salt and pepper.
Drain potatoes thoroughly and return to pot. Mash until smooth, then gradually add butter and warm milk until creamy. Season with salt and pepper.
Serve sausages over mashed potatoes, generously topped with onion gravy.
