Bobotie
Fragrant curry spices transform ground beef into a warming, deeply savory dish that's pure comfort food. Caramelized onions and garlic build a rich foundation, while turmeric, cumin, and coriander create complex layers of flavor that develop as it simmers. Make this hearty side whenever you want something more interesting than plain rice or vegetables to accompany your meal.
Total time
1 hour 5 minutes

Ingredients
- 2 lbs ground beef or lamb
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 2 tbsp vegetable oil
- 2 tbsp curry powder

- 2 slices white bread, crusts removed
- 1/2 cup milk
- 2 bay leaves
- 3 large eggs
- 1 cup whole milk
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Soak the bread slices in 1/2 cup milk until soft, then mash with a fork to create a paste.
- Heat oil in a large skillet over medium heat. Add onions and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add ground meat and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.
- Stir in curry powder, turmeric, coriander, cumin, salt, and pepper. Cook for 2 minutes until fragrant.
- Add tomato paste, apricot jam, chutney, raisins, and almonds. Mix well.
- Stir in the soaked bread mixture and combine thoroughly. Remove from heat.
- Transfer the meat mixture to the prepared baking dish and press down evenly. Insert bay leaves into the surface.
- In a bowl, whisk together the eggs, 1 cup milk, and 1/4 teaspoon salt to make the custard topping.
- Pour the custard mixture over the meat, ensuring it covers the entire surface.
- Bake for 30-35 minutes until the top is golden brown and set.
- Let rest for 10 minutes before serving. Remove bay leaves before serving.
