Bruschetta

Ingredients

• 1 French baguette or Italian bread, cut into 1/2-inch slices
• 4 large ripe Roma tomatoes, seeded and diced
• 3 cloves garlic, minced (plus 1 whole clove for rubbing)
• 1/4 cup fresh basil leaves, chiffonade
• 1/4 cup extra virgin olive oil, plus more for brushing
• 1 tablespoon balsamic vinegar
• 1/2 teaspoon flaky sea salt
• 1/4 teaspoon freshly ground black pepper
• 2 tablespoons balsamic glaze for drizzling

Instructions

1. Preheat your oven to 400°F (200°C) or heat a grill pan over medium-high heat.
2. In a medium bowl, combine the diced tomatoes, minced garlic, fresh basil, extra virgin olive oil, balsamic vinegar, salt, and pepper. Gently toss to combine and let marinate at room temperature for 10 minutes to allow flavors to meld.
3. Arrange bread slices on a baking sheet and brush both sides lightly with olive oil. Toast in the oven for 3-4 minutes per side until golden and crispy, or grill until char marks appear.
4. Remove toasted bread from oven and immediately rub one side of each slice with the whole garlic clove while still warm.
5. Spoon the tomato mixture generously onto each garlic-rubbed toast, allowing some of the juices to soak into the bread.
6. Arrange on a serving platter, drizzle with balsamic glaze, and serve immediately while the bread is still crispy.
