Classic Poutine

- 2 lbs russet potatoes, cut into 1/2-inch fries
- 2 cups fresh cheese curds
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp soy sauce
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Vegetable oil for frying
- Salt to taste

Soak cut potatoes in cold water for 30 minutes, then pat completely dry.

Heat oil to 325°F in a large pot or deep fryer. Fry potatoes in batches for 3-4 minutes. Remove and drain.

Increase oil temperature to 375°F. Fry potatoes again for 2-3 minutes until golden and crispy.

Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.

Gradually add beef broth, whisking constantly until smooth. Add soy sauce, garlic powder, and pepper.

Simmer gravy for 5-8 minutes until thickened, stirring occasionally.

Season hot fries with salt and divide among serving plates.

Top fries generously with cheese curds.

Pour hot gravy over the cheese curds and fries. Serve immediately while cheese is melting.
