Season the burgers generously on both sides with salt and pepper.
Place the burgers on the grill and cook for 4 to 6 minutes per side.
While the burgers cook, bread the onions and fry until golden brown. Set aside to drain.
With about 2 minutes left in the cooking process, add a slice of cheddar cheese to each burger.
Add the bacon to the grill to reheat and crisp up.
Remove the burgers from the grill and let rest for 3 to 4 minutes.
Brush the cut sides of the buns with melted unsalted butter.
Toast the buns in a pan over medium heat or on a griddle at 350°F for 2 to 3 minutes until golden.
Assemble the burgers: bottom toasted bun, burger patty, 1 to 2 slices of crispy bacon (halved), 1/4 cup pickled jalapeños, crispy tobacco onions, 2 to 3 tbsp BBQ sauce, and top with the toasted bun.
Serve with additional BBQ sauce on the side.
