Dulce de Leche
Silky caramel magic happens when sweetened milk transforms into this rich, spreadable dulce de leche through careful simmering and stirring. The subtle vanilla and salt balance the deep caramel notes, creating a luscious topping for ice cream, pastries, or straight-from-the-spoon indulgence. Make this when you want an impressive homemade treat that feels fancy but takes just half an hour.

Ingredients
- 4 cups whole milk
- 1 cup granulated sugar
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- Pinch of salt
Instructions
- In a heavy-bottomed saucepan, combine milk and sugar over medium heat, stirring until sugar dissolves completely.
- Add vanilla extract, baking soda, and salt to the mixture, stirring well to combine.
- Reduce heat to low and simmer uncovered, stirring occasionally with a wooden spoon to prevent sticking.
- Continue cooking for 1.5 to 2.5 hours, stirring more frequently as the mixture thickens and darkens to a golden caramel color.
- The dulce de leche is ready when it coats the back of a spoon and has reduced to about 1 cup in volume.
- Remove from heat and let cool slightly before transferring to sterilized jars.
- Store covered in the refrigerator for up to 1 month. Bring to room temperature before serving.
