Glossy Restaurant-Style Green Beans
Crisp-tender green beans tossed in a light, glossy pan sauce of shallot, garlic, reduced chicken broth, and lemon. A bright, elegant side that stays fresh-tasting, never heavy or creamy.

Ingredients
- 1 lb fresh haricots verts or thin green beans, trimmed
- 1 1/2 tablespoons extra-virgin olive oil
- 2 tablespoons shallot, very finely minced
- 1 small garlic clove, very finely minced
- 1/4 cup good-quality chicken broth
- 1 teaspoon fresh lemon juice, plus more to taste
- 1 teaspoon unsalted butter (optional, for a silkier finish)
- Kosher salt and freshly ground black pepper
- Optional: pinch of red pepper flakes, chopped parsley, lemon zest, or fresh thyme
Instructions
- Blanch the beans. Bring a large pot of well-salted water to a boil. Add the beans and cook for. 3-4 minutes, until bright green and crisp-tender. Transfer immediately to ice water, then drain and dry well.
- Build the base. Heat the olive oil in a wide skillet over medium heat. Add the shallot and cook. for 2-3 minutes, until softened but not browned. Add the garlic and cook for 30 seconds.
- Reduce the broth. Pour in the chicken broth and simmer for 2-3 minutes, until reduced by. roughly half and slightly glossy.
- Finish the beans. Add the green beans and toss for 2-3 minutes, until hot and evenly coated. Stir in the lemon juice and optional butter. Season with salt and plenty of black pepper.
- Serve. Finish with parsley, thyme, or a little lemon zest. Serve immediately while the beans are. still bright and crisp.
