Lomi Lomi Salmon

- 1 lb salted salmon fillet
- 4 large ripe tomatoes, diced
- 1 large sweet onion, finely diced
- 4 green onions, chopped
- 2 tbsp fresh cilantro, chopped (optional)
- 1 Hawaiian chili pepper, minced (optional)
- Fresh ground black pepper to taste

Rinse the salted salmon under cold running water to remove excess salt.

Place salmon in a large bowl and cover with cold water. Soak for 15-20 minutes to further reduce saltiness.

Remove salmon from water and pat dry with paper towels.

Using your hands, shred the salmon into small, bite-sized flakes, removing any bones or skin.

In a large mixing bowl, combine the shredded salmon with diced tomatoes and sweet onion.

Using your hands, gently mix and massage the ingredients together, breaking up the salmon further if needed.

Add green onions, cilantro, and chili pepper if using.

Season lightly with black pepper, tasting as you go since the salmon is already salted.

Let the mixture sit for 10 minutes to allow flavors to meld before serving.

Serve chilled or at room temperature as a side dish with rice or poi.
