Meen Kulambu (Tamil Fish Curry)

Ingredients

• 600g firm white fish fillets (such as kingfish, snapper, or catfish), cut into 2-inch pieces
• 1 lemon-sized ball of tamarind (approximately 40g), soaked in 1.5 cups warm water
• 3 tablespoons sesame oil (gingelly oil)
• 1/2 teaspoon black mustard seeds
• 1/4 teaspoon fenugreek seeds
• 2 dried red chilies, broken in half
• 20 fresh curry leaves
• 15 pearl onions (shallots), peeled and halved
• 6 garlic cloves, minced
• 1.5 teaspoons fresh ginger, grated
• 2 medium tomatoes, finely chopped
• 2 tablespoons Kashmiri red chili powder
• 1.5 tablespoons coriander powder
• 1/2 teaspoon turmeric powder
• 1 teaspoon black pepper powder
• 1.5 teaspoons salt, or to taste
• 1 teaspoon jaggery or brown sugar
• 2 tablespoons fresh coriander leaves, chopped, for garnish

Instructions

1. Soak the tamarind ball in 1.5 cups of warm water for 15 minutes, then squeeze and strain the pulp thoroughly to extract the tamarind water. Discard the fibrous solids and set the tamarind water aside.
2. Pat the fish pieces dry with paper towels and rub them gently with 1/4 teaspoon turmeric powder and 1/4 teaspoon salt. Set aside to marinate while you prepare the base.
3. Heat the sesame oil in a wide, heavy-bottomed pan or clay pot over medium-high heat. Once the oil shimmers, add the mustard seeds and let them splutter for 30 seconds.
4. Add the fenugreek seeds and dried red chilies to the pan and fry for 20 seconds until the chilies darken slightly, being careful not to burn the fenugreek.
5. Add the curry leaves — they will crackle immediately — followed by the pearl onions. Sauté the onions over medium heat for 6 to 7 minutes, stirring frequently, until they turn golden brown at the edges.
6. Add the minced garlic and grated ginger to the pan and sauté for 2 minutes until the raw aroma disappears and the mixture turns fragrant.
7. Add the chopped tomatoes and cook over medium heat for 5 minutes, mashing them as they soften, until the oil begins to separate from the tomato mixture.
8. Reduce the heat to low and add the Kashmiri red chili powder, coriander powder, remaining 1/4 teaspoon turmeric, and black pepper powder. Stir continuously for 1 minute to toast the spices in the oil without burning them.
9. Pour in the tamarind water and stir well to combine with the spice base. Add the remaining salt and the jaggery. Bring the curry to a boil over medium-high heat, then reduce to a gentle simmer for 8 minutes until the raw tamarind smell cooks off and the curry thickens slightly.
10. Gently slide the marinated fish pieces into the simmering curry in a single layer. Do not stir; instead, shake the pan gently to coat the fish in the gravy. Cook uncovered for 8 to 10 minutes, gently spooning the curry over the fish once or twice, until the fish is cooked through and flakes easily with a fork.
11. Taste the curry and adjust salt, tamarind, or chili to your preference. The curry should taste simultaneously sour, spicy, and slightly sweet. Garnish with fresh coriander leaves and serve hot with steamed rice or idli.
