New England Lobster Roll

Ingredients

• 4 cooked lobsters (1.5 lbs each) or 1.5 lbs cooked lobster meat
• 1/3 cup high-quality mayonnaise
• 1 celery stalk, finely diced
• 2 tablespoons fresh chives, chopped
• 1 tablespoon fresh lemon juice
• 1/2 teaspoon Old Bay seasoning
• Salt and white pepper to taste
• 4 New England split-top hot dog buns
• 3 tablespoons unsalted butter
• Butter lettuce leaves for serving
• Lemon wedges for garnish

Instructions

1. If using whole lobsters, remove all meat from shells, keeping pieces as large as possible. Chill lobster meat for at least 30 minutes.
2. In a large bowl, gently combine lobster meat, mayonnaise, diced celery, chives, lemon juice, and Old Bay seasoning.
3. Season with salt and white pepper to taste. Mix gently to avoid breaking up the lobster meat.
4. Cover and refrigerate the lobster salad for 15 minutes to allow flavors to meld.
5. Heat a large skillet or griddle over medium heat. Butter the outside surfaces of each bun.
6. Toast the buns in the skillet, turning to golden brown on both sides, about 2–3 minutes per side.
7. Line each warm bun with butter lettuce leaves.
8. Generously fill each bun with the chilled lobster mixture, allowing it to overflow slightly.
9. Serve immediately with lemon wedges and potato chips on the side.
