New Orleans Beignets

Ingredients
- 1 cup warm water (110°F)
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1 large egg, beaten
- 1/2 cup whole milk
- 4 cups all-purpose flour
- 1 tsp salt
- 2 tbsp vegetable shortening, melted
- Vegetable oil for deep frying
- 2 cups powdered sugar for dusting
Instructions
- In a large bowl, combine warm water, granulated sugar, and yeast. Let stand for 5 minutes until foamy.
- Add beaten egg and milk to the yeast mixture, whisking to combine.
- In a separate bowl, whisk together flour and salt. Gradually add to the wet ingredients along with melted shortening.
- Mix until a soft, slightly sticky dough forms. Turn onto a floured surface and knead for 2-3 minutes until smooth.
- Place dough in an oiled bowl, cover with plastic wrap, and refrigerate for at least 2 hours or overnight.
- Heat oil in a deep fryer or heavy pot to 375°F.
- On a floured surface, roll dough to 1/4-inch thickness. Cut into 2-inch squares using a sharp knife or pizza cutter.
- Carefully drop 3-4 squares at a time into hot oil. Fry for 1-2 minutes until golden brown, flipping once halfway through.
- Remove with a slotted spoon and drain briefly on paper towels.
- While still warm, generously dust with powdered sugar using a fine-mesh sieve.
- Serve immediately while hot and crispy.
