Crispy instant noodles tossed with garlic, egg, and fresh vegetables create a surprisingly satisfying stir-fry that's worlds apart from the package directions. The soy and oyster sauce add savory depth, while the noodles stay wonderfully chewy and textured. Jump to recipeCook instant noodles in boiling water for 1-2 minutes until slightly undercooked. Drain and set aside, reserving the seasoning packet.
Heat vegetable oil in a wok or large skillet over high heat.
Add minced garlic and stir-fry for 30 seconds until fragrant.
Push garlic to the side and crack the egg into the wok. Scramble until just set.
Add mixed vegetables and stir-fry for 2-3 minutes until slightly tender.
Add the cooked noodles to the wok.
Season with soy sauce, oyster sauce, sugar, white pepper, and half of the seasoning packet.
Toss everything together over high heat for 1-2 minutes until well combined and heated through.
Adjust seasoning to taste and add Thai chilies if desired.
Serve hot, garnished with fresh cilantro.
