Roasted Garlic Parmesan Potatoes

Ingredients
- 3 lbs red potatoes, rinsed and quartered
- 1/4 cup olive oil
- 8 cloves garlic, finely minced
- 1 cup grated Parmesan cheese, divided
- Salt and pepper to taste
- 2 tbsp unsalted butter, melted
- 3 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 400°F.
- Slice the red potatoes into quarters.
- Add the potatoes to a bowl with olive oil, garlic, 3/4 cup Parmesan cheese, salt, and pepper. Mix until combined using a spoon or rubber spatula.
