Crispy caramelized Spam meets sticky sushi rice and nori in this beloved Hawaiian-Japanese street food—savory, slightly sweet, and completely addictive. A quick pan-sear creates the perfect glaze while the seaweed wrapper keeps everything neat and portable. Perfect for lunch boxes, casual gatherings, or whenever you crave something nostalgic and satisfying in under 30 minutes.
Jump to recipeSeason the rice by mixing rice vinegar, sugar, and salt in a small bowl until dissolved. Fold into cooled rice and set aside.
In a small saucepan, combine soy sauce, mirin, and brown sugar. Simmer over medium heat for 2-3 minutes until slightly thickened to create teriyaki glaze.
Heat vegetable oil in a large skillet over medium-high heat. Add Spam slices and cook for 2-3 minutes per side until golden brown.
Brush cooked Spam with teriyaki glaze and cook for another minute per side. Remove from heat.
Place a musubi mold or empty Spam can on a cutting board. If using the can, remove both ends and clean thoroughly.
Place one half-sheet of nori shiny side down. Center the mold on the nori.
Fill the mold with about 1/3 cup seasoned rice, pressing down firmly to compact.
Place one glazed Spam slice on top of the rice, then add another thin layer of rice if desired.
Remove the mold carefully. Wrap the nori around the rice and Spam, sealing the seam with a dab of water.
Repeat with remaining ingredients. Serve immediately or wrap individually in plastic wrap for later.
