Spicy Shoyu Ramen
A fiery umami bomb, this spicy shoyu ramen delivers layers of heat from doubanjiang balanced against the savory depth of dashi and soy sauce, with ginger and sesame oil adding warm, toasted complexity. Ready in just thirty minutes, it's your go-to weeknight comfort bowl that tastes like you've been simmering broth all day. Perfect for chasing away colds or satisfying serious noodle cravings.

Ingredients
- 1 tsp ginger, grated with juice (from a 1-inch knob)
- 2 cloves garlic
- 1 tbsp toasted sesame oil
- 2 tsp doubanjiang (spicy chili bean paste)
- 1½ cups chicken stock
- 1½ cups dashi (Japanese soup stock)
- 2½ tbsp soy sauce
- 1 tsp Diamond Crystal kosher salt
- ⅛ tsp white pepper powder
- 2 servings fresh ramen noodles (10-12 oz)
- 4 slices chashu (Japanese braised pork belly)
- 1 ramen egg (ajitsuke tamago), halved lengthwise
- 4 slices narutomaki (fish cakes)
- ¼ cup menma (seasoned bamboo shoots)
- 1 green onion, chopped
- Shiraga negi (julienned green onions)
- ½ sheet nori, cut in half
- La-yu (Japanese chili oil), optional
Instructions
- Prepare the ramen toppings ahead of time (a day in advance for the ramen egg and homemade chashu) so they're ready to serve with your piping hot ramen soup.
- Prepare a big pot of water for cooking the ramen noodles. Slowly bring it to a boil on medium heat while you prepare all the ingredients.
- Grate the ginger and reserve 1 tsp ginger with juice. Mince or press the garlic cloves.
- Set a small saucepan over medium-low heat. Add the toasted sesame oil, garlic, and grated ginger. Cook until fragrant, about 1–2 minutes, being careful not to burn the aromatics.
- Add the doubanjiang and stir for 15 seconds.
- Add the chicken stock, dashi, and soy sauce and bring to a boil. Once boiling, reduce the heat and simmer for a few minutes.
- Taste the soup and adjust the seasoning with salt and white pepper. Cover with a lid, reduce the heat to low, and keep the soup barely simmering while you cook the noodles.
- Before cooking, loosen up the fresh ramen noodles with your hands. Once the pot of water is boiling, add the noodles and cook according to package instructions.
- While cooking, stir and separate the noodles with chopsticks. When done, drain them well in a strainer, shaking it a few times to drain the water thoroughly.
- Divide the noodles into individual ramen bowls. Pour about 1½ cups of the hot soup broth into each bowl.
- Optionally, lift the soup-soaked noodles high to straighten them, then fold and arrange neatly for an attractive presentation.
- Quickly and neatly arrange the prepared toppings on top of the noodles. Serve immediately and season to taste with additional white pepper powder and optional la-yu chili oil.
