Takoyaki

Golden, piping-hot octopus balls with a crispy exterior and molten, custardy center are the ultimate Japanese street food experience. Tender octopus pieces, scallions, and tempura scraps come together in a light, savory batter, then finished with takoyaki sauce, mayo, and bonito flakes that dance from the heat. Perfect for parties, appetizers, or whenever you want to impress with something impressively interactive and utterly addictive.

Ingredients

1 cup all-purpose flour

2 large eggs

1 1/2 cups dashi stock, chilled

1/2 tsp salt

1/2 tsp soy sauce

8 oz cooked octopus, cut into 1/2-inch pieces

3 green onions, finely chopped

1/4 cup tenkasu (tempura scraps)

2 tbsp pickled red ginger, finely chopped

Vegetable oil for cooking

Takoyaki sauce or okonomiyaki sauce for topping

Japanese mayonnaise for topping

Bonito flakes (katsuobushi) for topping

Aonori (dried seaweed flakes) for topping

Instructions

In a large mixing bowl, whisk together flour and salt. Create a well in the center and add eggs, dashi stock, and soy sauce. Whisk from the center outward until you have a smooth, thin batter with no lumps. The consistency should be similar to crepe batter.

Heat a takoyaki pan over medium heat and brush each cavity generously with vegetable oil. Pour batter into each hole until slightly overflowing.

Quickly drop one piece of octopus into each cavity, followed by a pinch of green onions, tenkasu, and pickled ginger.

Cook for about 2 minutes until the bottom begins to set. Using a takoyaki pick or chopstick, rotate each ball 90 degrees, tucking any overflow batter into the cavity. Continue rotating every 30–45 seconds until the takoyaki are golden brown and crispy on all sides, about 4–5 minutes total.

Transfer the cooked takoyaki to a serving plate. Drizzle generously with takoyaki sauce and Japanese mayonnaise in a zigzag pattern.

Top with a generous sprinkle of bonito flakes and aonori. Serve immediately while hot and crispy.
