Tarte Flambée

Ingredients

• 2 cups all-purpose flour
• 1/2 teaspoon salt
• 2 tablespoons olive oil
• 1/2 cup warm water
• 1 cup crème fraîche
• 2 large yellow onions, thinly sliced
• 6 oz bacon or lardons, diced
• 1/4 teaspoon white pepper
• 1/4 teaspoon nutmeg
• 2 tablespoons butter
• Fresh chives for garnish

Instructions

1. Make the dough by combining flour and salt in a bowl. Add olive oil and warm water, mixing until a smooth dough forms. Knead for 5 minutes until elastic. Cover and rest for 15 minutes.
2. Preheat oven to 475°F (245°C). Place a pizza stone or baking sheet in the oven to heat.
3. Cook diced bacon in a large skillet over medium heat until crispy. Remove and drain on paper towels.
4. In the same pan, add butter and sliced onions. Cook slowly over medium-low heat for 15-20 minutes until golden and caramelized. Season with salt.
5. Roll the dough very thin on a floured surface, about 1/8-inch thick, forming a rectangular shape.
6. Transfer dough to parchment paper. Spread crème fraîche evenly over the surface, leaving a small border.
7. Season crème fraîche with white pepper and nutmeg. Top with caramelized onions and crispy bacon.
8. Slide the tarte flambée (on parchment) onto the hot pizza stone or baking sheet.
9. Bake for 10-12 minutes until edges are golden brown and crispy.
10. Remove from oven, garnish with fresh chives, slice, and serve immediately.
