Tater Tot Breakfast Casserole

Ingredients

• 1 lb breakfast sausage, cooked and drained
• 1 bag frozen tater tots (about 32 oz)
• 8 large eggs
• 2 cups shredded cheddar cheese, divided
• 1 cup milk
• 1/2 cup diced onion (optional)
• 1/2 cup diced bell pepper (optional)
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp garlic powder

Instructions

1. Preheat: Heat the oven to 375°F. Grease a 9 x 13-inch baking dish.
2. Cook the sausage: Brown the sausage in a skillet, breaking it into crumbles. Drain excess grease.
3. Build the casserole: Arrange the frozen tater tots evenly in the baking dish. Scatter the sausage, onion, and bell pepper over the tots. Sprinkle with 1 1/2 cups of the cheese.
4. Mix the eggs: Whisk the eggs, milk, salt, black pepper, and garlic powder until smooth.
5. Assemble: Pour the egg mixture evenly over the casserole. Top with the remaining 1/2 cup cheese.
6. Bake: Bake for 40-45 minutes, until the eggs are set in the center and the top is golden.
7. Rest: Let the casserole stand for 5-10 minutes before slicing and serving.
