Set up a breading station with three shallow dishes: flour in the first, beaten eggs in the second, and panko breadcrumbs in the third. Dredge each pork cutlet in flour, shaking off excess, then dip in egg, and finally press firmly into panko, ensuring an even coating on all sides.
Heat vegetable oil in a deep heavy-bottomed pan or Dutch oven to 340°F (170°C). The oil should be about 2 inches deep. Use a thermometer to maintain consistent temperature throughout frying.
