Vinegar Based Coleslaw
Crisp, tangy cabbage meets a bright vinegar dressing that's both sweet and sharp—no creamy mayo required. Ingredients
- 1/2 head green cabbage, thinly sliced
- 1 cup red cabbage, thinly sliced
- 2 carrots, shredded
- 3 green onions, thinly sliced
- 1/4 cup apple cider vinegar
- 1 tbsp grainy mustard
- 1 tbsp honey or 1 tsp sugar
- 1/4 cup olive oil
- 1 tsp celery seed
- Kosher salt to taste
- Fresh cracked pepper to taste
Instructions
- In a small bowl, whisk together vinegar, mustard, honey, and olive oil, and set aside.
- In a separate large bowl, mix together green cabbage, red cabbage, carrots, green onions, and celery seeds.
- Pour a small amount of the dressing onto the cabbage mixture and toss until combined, adding more dressing until the desired amount is achieved.
- Season with salt and pepper, and chill before serving.
