Ingredients
- 4 cups cubed fresh watermelon, seeds removed
- 8 oz premium vodka
- 2 tablespoons fresh lime juice
- 1 tablespoon honey or agave syrup
- 1 cup ice cubes
- 1/2 cup sparkling water
- Fresh mint sprigs for garnish
- Lime wheels for garnish
- Watermelon wedges for garnish
Instructions
- Add cubed watermelon to a blender and puree until completely smooth, about 1-2 minutes.
- Strain the watermelon puree through a fine-mesh sieve into a pitcher, pressing solids with a spoon to extract maximum juice. Discard pulp.
- Add vodka, lime juice, and honey to the watermelon juice, stirring until honey is completely dissolved.
- Fill four glasses with ice cubes and divide the watermelon vodka mixture evenly among them.
- Top each glass with 2 tablespoons of sparkling water for a light fizz.
- Garnish each drink with a sprig of fresh mint, a lime wheel, and a small watermelon wedge.
- Serve immediately while chilled.
