Jump to recipeIn a heavy-bottomed saucepan, combine milk, cream, vanilla bean pods, and seeds. Heat over medium heat until just beginning to simmer, then remove from heat.
In a large bowl, whisk egg yolks and sugar until pale and thick, about 3 minutes.
Slowly pour 1/3 of the hot milk mixture into the egg yolks, whisking constantly to temper.
Pour the tempered egg mixture back into the saucepan and cook over low heat, stirring constantly with a wooden spoon, until mixture coats the back of the spoon (170°F).
Strain the custard through a fine-mesh sieve into a clean bowl. Stir in salt.
Cover with plastic wrap directly touching the surface and refrigerate for at least 4 hours or overnight.
Remove vanilla bean pods and churn in an ice cream maker according to manufacturer's instructions, typically 20-25 minutes.
Transfer to an airtight container and freeze for at least 2 hours before serving.
