Bananas Foster

- 4 ripe bananas, firm but not green
- 1/4 cup unsalted butter
- 1 cup packed dark brown sugar
- 1/2 tsp ground cinnamon
- 1/4 cup banana liqueur
- 1/4 cup dark rum
- 4 scoops vanilla ice cream
- Pinch of salt

Peel the bananas and slice them in half lengthwise, then cut each piece in half crosswise to create 4 pieces per banana.

Melt the butter in a large skillet over medium heat. Add the brown sugar, cinnamon, and salt, stirring constantly until the sugar dissolves and the mixture begins to bubble, about 2-3 minutes.

Add the banana liqueur and stir to combine. Gently place the banana pieces in the caramel sauce in a single layer and cook for 1-2 minutes per side until slightly softened but still holding their shape.

Remove the pan from heat and carefully add the dark rum. Return to heat and tilt the pan slightly toward the flame to ignite the rum, or use a long match or lighter. Allow the flames to burn off naturally, about 30 seconds to 1 minute.

Spoon the warm bananas and sauce over scoops of vanilla ice cream and serve immediately.
