Belgian Waffles

- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 packet (2¼ tsp) active dry yeast
- 1 teaspoon salt
- 1¾ cups warm milk (110°F)
- 3 large eggs, separated
- 8 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Cooking spray or melted butter for waffle iron
Instructions

In a large bowl, whisk together flour, sugar, yeast, and salt.

In a separate bowl, combine warm milk, egg yolks, melted butter, and vanilla extract.

Pour the milk mixture into the flour mixture and whisk until smooth. Cover and let stand for 15 minutes until slightly bubbly.

In a clean bowl, beat egg whites with an electric mixer until stiff peaks form.

Gently fold the beaten egg whites into the batter until just combined, being careful not to overmix.

Preheat Belgian waffle iron according to manufacturer's instructions and lightly grease with cooking spray or melted butter.

Pour appropriate amount of batter (usually ¾ to 1 cup) into the center of the waffle iron.

Cook for 3-5 minutes or until golden brown and crispy.

Remove carefully and serve immediately with butter, maple syrup, fresh fruit, or powdered sugar as desired.
