Char Siu Chinese BBQ Pork

Ingredients

3 lbs pork shoulder, cut into 2-inch thick strips
3 tbsp hoisin sauce
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp honey
2 tbsp brown sugar
2 tbsp Shaoxing wine or dry sherry
1 tbsp sesame oil
1 tsp five-spice powder
3 cloves garlic, minced
1 tsp fresh ginger, grated
1/2 tsp red food coloring (optional)
2 tbsp vegetable oil
2 tbsp maltose or corn syrup for glazing

Instructions

In a large bowl, whisk together hoisin sauce, soy sauce, oyster sauce, honey, brown sugar, Shaoxing wine, sesame oil, five-spice powder, minced garlic, grated ginger, and red food coloring if using.
Add pork strips to the marinade, turning to coat completely. Cover and refrigerate for at least 3 hours or overnight.
Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
Remove pork from marinade, reserving marinade for basting. Place pork strips on the wire rack and brush with vegetable oil.
Roast for 20 minutes, then flip pork and baste with reserved marinade. Continue roasting for another 15 minutes.
Mix maltose with 1 tablespoon of the reserved marinade. Brush this glaze over the pork and roast for final 10 minutes until internal temperature reaches 145°F (63°C).
Remove from oven and let rest for 5 minutes before slicing against the grain into 1/4-inch thick pieces.
Serve immediately, drizzled with any remaining pan juices.
