Jump to recipeIn a large bowl, whisk together hoisin sauce, soy sauce, oyster sauce, honey, brown sugar, Shaoxing wine, sesame oil, five-spice powder, minced garlic, grated ginger, and red food coloring if using.
Add pork strips to the marinade, turning to coat completely. Cover and refrigerate for at least 3 hours or overnight.
Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
Remove pork from marinade, reserving marinade for basting. Place pork strips on the wire rack and brush with vegetable oil.
Roast for 20 minutes, then flip pork and baste with reserved marinade. Continue roasting for another 15 minutes.
Mix maltose with 1 tablespoon of the reserved marinade. Brush this glaze over the pork and roast for final 10 minutes until internal temperature reaches 145°F (63°C).
Remove from oven and let rest for 5 minutes before slicing against the grain into 1/4-inch thick pieces.
Serve immediately, drizzled with any remaining pan juices.
