Dumplings in Chili Oil

Ingredients

• 1 package round dumpling wrappers (30-35 pieces)
• 1 lb ground pork
• 2 cups Chinese chives, finely chopped
• 2 tbsp soy sauce
• 1 tbsp Shaoxing wine
• 1 tsp sesame oil
• 1/2 tsp white pepper
• 1 tsp salt
• 1/4 cup vegetable oil
• 3 tbsp Sichuan chili flakes
• 2 tbsp sesame seeds
• 4 cloves garlic, minced
• 1 inch ginger, minced
• 2 tbsp light soy sauce
• 1 tbsp dark soy sauce
• 1 tbsp Chinkiang black vinegar
• 1 tsp sugar
• 2 green onions, sliced thin

Instructions

1. Mix ground pork, chives, soy sauce, Shaoxing wine, sesame oil, white pepper, and salt in a bowl until well combined.
2. Place 1 tablespoon of filling in center of each wrapper. Wet edges with water, fold into half-moon shape, and pleat edges to seal.
3. Heat vegetable oil in a small saucepan over medium heat until shimmering. Remove from heat.
4. In a heatproof bowl, combine chili flakes and sesame seeds. Carefully pour hot oil over mixture and let sizzle for 30 seconds.
5. Stir minced garlic and ginger into the chili oil. Add both soy sauces, vinegar, and sugar. Mix well and set aside.
6. Bring a large pot of water to boil. Add dumplings and cook until they float, about 6-8 minutes.
7. Remove dumplings with a slotted spoon and arrange in serving bowls.
8. Generously spoon chili oil mixture over dumplings and garnish with sliced green onions before serving.
