Born from the provinces of the Philippine archipelago, adobo is the country's unofficial national dish — a braise of meat slow-cooked in vinegar, soy sauce, and garlic that uses acidity as a natural preservative in the tropical heat. Every region and every family holds a slightly different version, but this recipe reflects the classic Tagalog style from Luzon, deep with bay leaf fragrance and finished with a glossy, caramelized sauce.
Jump to recipeIn a large bowl or zip-lock bag, combine the chicken pieces with the soy sauce, vinegar, crushed garlic, bay leaves, and whole black peppercorns. Toss to coat evenly, then marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
Remove the chicken from the marinade, shaking off any garlic or peppercorns, and set them aside. Reserve all of the marinade liquid.
Heat 2 tablespoons of neutral cooking oil in a wide, heavy-bottomed pot or Dutch oven over medium-high heat. Working in batches if needed, add the chicken pieces skin-side down and sear for 4–5 minutes until the skin is golden brown. Flip and sear the other side for 2–3 minutes. Remove the browned chicken and set aside.
In the same pot, add the reserved garlic cloves from the marinade and sauté over medium heat for 1–2 minutes until lightly golden and fragrant.
Return the chicken to the pot and pour in the reserved marinade along with 1/2 cup of water. Add the bay leaves and peppercorns from the marinade. Bring the liquid to a boil over high heat.
Once boiling, reduce the heat to low, cover the pot, and simmer for 25 minutes, turning the chicken halfway through so it cooks evenly and absorbs the braising liquid.
Remove the lid and increase the heat to medium. If using sugar, stir it in now. Continue to cook uncovered for 10–15 minutes, turning the chicken occasionally, until the sauce reduces by half and becomes a deep, glossy, dark brown glaze that clings to the chicken.
Taste the sauce and adjust seasoning — add a splash more vinegar for brightness or a pinch of sugar to mellow sharpness. Discard the bay leaves.
Serve the chicken adobo over steamed white rice, spooning the reduced sauce generously over the top.
