Jump to recipeIn a small bowl, combine warm milk, yeast, and sugar. Let stand for 5 minutes until foamy.
In a large bowl, combine flour and salt. Make a well in the center and add yeast mixture and olive oil.
Mix until dough forms, then knead on floured surface for 8-10 minutes until smooth and elastic.
Place dough in oiled bowl, cover, and let rise in warm place for 30 minutes until doubled.
Meanwhile, mix grated cheese and crumbled feta in a bowl. Set aside.
Preheat oven to 450°F (230°C).
Divide dough into 4 portions. Roll each into oval shape about 8 inches long.
Place cheese mixture in center of each oval, leaving 2-inch border.
Fold long sides over filling and twist ends to create boat shape, pinching seams tightly.
Place on parchment-lined baking sheet. Brush with beaten egg.
Bake for 12-15 minutes until golden brown and cheese is melted.
Remove from oven and immediately crack one egg into center of each boat.
Add 1 tablespoon butter to each and return to oven for 2-3 minutes until egg whites are just set.
Serve immediately while hot, mixing egg and butter into cheese before eating.
