Jump to recipeHeat oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown on all sides, about 8 minutes total.
Add sliced onions to the pot and cook until softened, about 5 minutes.
Add tomato paste and cook for 1 minute until fragrant.
Pour in beef stock, add bay leaf, and bring to a boil. Reduce heat and simmer covered for 20 minutes.
Add carrots and potatoes to the pot and continue simmering for 15 minutes until vegetables are tender.
Remove from heat and discard bay leaf. Break curry roux into pieces and stir into the pot until completely dissolved.
Return to low heat and add soy sauce and Worcestershire sauce. Simmer for 5 minutes until thickened.
Taste and adjust seasoning with salt and pepper as needed.
Serve hot over steamed rice in bowls.
