Gradually add ice water, 1 tablespoon at a time, mixing gently until dough just comes together. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
Preheat oven to 425°F. Roll out one disk of dough on a floured surface to fit a 9-inch pie pan. Transfer to pan and trim edges, leaving a 1-inch overhang.
In a large bowl, gently combine blueberries, ¾ cup sugar, cornstarch, lemon juice, lemon zest, cinnamon, and ¼ teaspoon salt. Let stand 10 minutes.
