Shape the mixture into small round dumplings (koftas).
Heat oil for deep frying and fry the koftas until golden brown. Set aside on paper towels to drain.
In a pan, heat 2 tbsp oil and sauté the chopped onions until golden.
Add the tomato puree and garam masala. Cook until the mixture thickens and oil separates.
Stir in the heavy cream and ground cashews. Simmer for 5 minutes until the gravy is rich and creamy.
Season with salt to taste.
Add the fried koftas to the gravy just before serving to keep them crispy.
