Crispy on the outside and pillowy within, this Lebanese flatbread gets its magic from a fragrant coating of za'atar—that addictive blend of thyme, sumac, and sesame that makes every bite sing. The dough comes together quickly and transforms in the oven into a golden canvas for the herbaceous, slightly tangy topping. Jump to recipeIn a large mixing bowl, combine flour, yeast, salt, and sugar. Make a well in the center and pour in warm water and 3 tablespoons of olive oil.
Mix with your hands or a wooden spoon until a shaggy dough forms, then knead on a lightly floured surface for 8-10 minutes until smooth and elastic. The dough should be slightly sticky but manageable.
Place the dough in a greased bowl, cover with a damp kitchen towel, and let it rise at room temperature for 1-1.5 hours until doubled in size.
Preheat your oven to 425°F (220°C). Divide the dough into 8 equal portions and shape each into a ball. Let them rest for 5 minutes.
On a lightly floured surface, flatten each ball into a thin oval or round about 1/4 inch thick. Place on parchment paper and let rest for 5 minutes.
In a small bowl, mix za'atar with 3 tablespoons of olive oil until it forms a paste. Spread 1-2 tablespoons of this mixture onto each flattened dough, leaving a small border around the edges.
Transfer the topped flatbreads to a baking sheet or directly onto the oven rack and bake for 8-12 minutes until golden brown and the edges are crispy. The bottom should be lightly charred in spots.
Remove from the oven and optionally brush the edges with a little more olive oil. Serve immediately while still warm.
