Mango Avocado Salad

- 2 ripe mangos, peeled and diced into 1-inch cubes
- 2 ripe avocados, pitted and sliced
- 6 cups mixed baby greens
- 1/2 small red onion, thinly sliced
- 1/2 cup fresh cilantro leaves, roughly chopped
- 1/4 cup extra virgin olive oil
- 3 tbsp fresh lime juice (about 2 limes)
- 1 tbsp honey or agave nectar
- 1/2 tsp cumin
- 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 2 tbsp toasted pepitas (pumpkin seeds)

In a small bowl or jar, whisk together the olive oil, lime juice, honey, cumin, salt, and black pepper until well combined. Set the dressing aside.

Arrange the mixed baby greens on a large serving platter or divide among four individual plates.

Scatter the diced mango, sliced avocado, and red onion evenly over the greens.

Drizzle the lime-cilantro dressing generously over the salad.

Sprinkle with fresh cilantro leaves and toasted pepitas.
