In a bowl, combine the oregano, olive oil, lemon zest, lemon juice, and mustard. Mix well.
Add the finely chopped garlic, water, salt, and pepper to the mixture and stir to combine.
Pour the marinade over the potatoes and toss to coat evenly. Set aside.
Preheat the oven to 190°C (370°F) with fan setting.
In a bowl, add the bread cut into pieces and the milk. Set aside to soak.
Grate the onion on a box grater placed over a dish towel. Squeeze the towel to remove all the liquid from the onion. Alternatively, finely chop the onion and sauté until softened.
In a large bowl, combine the ground beef, ground pork, prepared onion, finely chopped garlic, soaked bread, olive oil, salt, pepper, oregano, finely chopped parsley, finely chopped mint, and egg. Mix very well until fully combined.
Shape the mixture into 10 burger patties and arrange them in the pan with the potatoes.
Cover the pan with aluminum foil and bake for 40 minutes.
Remove the foil and bake for another 25-30 minutes, until the burgers and potatoes are nicely golden.
Remove from the oven and serve with Greek horiatiki salad and a sprinkle of oregano.
