Pad Mama
Crispy instant noodles tossed with garlic, egg, and fresh vegetables create a surprisingly satisfying stir-fry that's worlds apart from the package directions. The soy and oyster sauce add savory depth, while the noodles stay wonderfully chewy and textured. Quick enough for a weeknight dinner, yet impressive enough to serve guests who appreciate clever comfort food.

Ingredients
- 2 packets instant noodles (Mama brand preferred)
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 egg
- 1 cup mixed vegetables (cabbage, carrots, green onions)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp white pepper
- 1 seasoning packet from instant noodles
- Fresh Thai chilies, to taste (optional)
- Fresh cilantro for garnish
Instructions
- Cook instant noodles in boiling water for 1-2 minutes until slightly undercooked. Drain and set aside, reserving the seasoning packet.
- Heat vegetable oil in a wok or large skillet over high heat.
- Add minced garlic and stir-fry for 30 seconds until fragrant.
- Push garlic to the side and crack the egg into the wok. Scramble until just set.
- Add mixed vegetables and stir-fry for 2-3 minutes until slightly tender.
- Add the cooked noodles to the wok.
- Season with soy sauce, oyster sauce, sugar, white pepper, and half of the seasoning packet.
- Toss everything together over high heat for 1-2 minutes until well combined and heated through.
- Adjust seasoning to taste and add Thai chilies if desired.
- Serve hot, garnished with fresh cilantro.
