Stir-fried noodles with tender pork, chicken, and shrimp create an irresistible one-pan meal bursting with savory umami and satisfying chew. Jump to recipeSoak the pancit noodles in warm water for 10 minutes until softened, then drain and set aside.
Heat 2 tablespoons oil in a large wok or skillet over medium-high heat. Cook pork and chicken until browned and cooked through, about 5-6 minutes. Remove and set aside.
Add shrimp to the same pan and cook for 2-3 minutes until pink. Remove and set aside with the meat.
Add remaining oil to the pan. Sauté onion and garlic until fragrant, about 2 minutes.
Add carrots and green beans, stir-fry for 3 minutes until slightly tender.
Add bell pepper and cabbage, cook for another 2 minutes until cabbage begins to wilt.
Return the cooked meat and shrimp to the pan and mix well.
Add the drained noodles, soy sauce, oyster sauce, fish sauce, and chicken broth. Toss everything together.
Cook for 3-4 minutes, stirring frequently, until noodles are heated through and have absorbed most of the liquid.
Season with black pepper and stir in half the green onions.
Transfer to a serving platter and garnish with remaining green onions, sliced hard-boiled eggs, and lemon wedges.
