Panna Cotta

Ingredients
- 1 packet (2¼ tsp) unflavored gelatin
- 3 tablespoons cold water
- 2 cups heavy cream
- ½ cup granulated sugar
- 1 vanilla bean, split and scraped (or 2 tsp vanilla extract)
- Pinch of salt
- Fresh berries for garnish
- Mint leaves for garnish
Instructions
- Sprinkle gelatin over cold water in a small bowl and let bloom for 5 minutes.
- In a saucepan, combine heavy cream, sugar, vanilla bean seeds and pod (or vanilla extract), and salt. Heat over medium heat, stirring occasionally, until sugar dissolves and mixture is steaming but not boiling.
- Remove from heat and whisk in the bloomed gelatin until completely dissolved. Remove vanilla bean pod if using.
- Strain mixture through a fine-mesh sieve to remove any lumps.
- Divide mixture evenly among 6 ramekins or serving glasses.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight until set.
- To serve, run a thin knife around edges if unmolding, or serve directly in glasses. Garnish with fresh berries and mint leaves.
