In a saucepan, combine heavy cream, sugar, vanilla bean seeds and pod (or vanilla extract), and salt. Heat over medium heat, stirring occasionally, until sugar dissolves and mixture is steaming but not boiling.
Remove from heat and whisk in the bloomed gelatin until completely dissolved. Remove vanilla bean pod if using.
Strain mixture through a fine-mesh sieve to remove any lumps.
Divide mixture evenly among 6 ramekins or serving glasses.
Cover with plastic wrap and refrigerate for at least 4 hours or overnight until set.
To serve, run a thin knife around edges if unmolding, or serve directly in glasses. Garnish with fresh berries and mint leaves.
