Truss the boneless pork shoulder with butcher's twine to help it keep its shape and cook evenly.
Coat the pork in 4 tablespoons of olive oil on all sides.
Season the pork on all sides with coarse salt and pepper (roughly 2 tablespoons of salt and 2 teaspoons of black pepper).
Transfer the pork to a roasting rack in a pan or baking dish and bake on the middle rack at 450°F for 45 minutes to begin browning.
Reduce the heat to 350°F and cook for 75 to 90 minutes or until the internal temperature reaches 160°F.
While the pork is cooking, mix the parsley, sage, thyme, rosemary, onion, garlic, vinegar, 1/3 cup olive oil, and salt and pepper to taste to make the herb sauce.
Once the pork reaches 160°F internally, spread 2/3 of the herb, garlic, and oil sauce all over the top and sides of the pork shoulder roast.
Return to the oven and cook for an additional 45 minutes to 1 hour or until it reaches 185°F internally. If the herbs begin turning brown too quickly, tent with foil and continue cooking.
Let the pork rest at room temperature for 15 to 20 minutes.
Remove the butcher's twine and slice the pork shoulder roast.
Serve with the remaining herb, garlic, and oil sauce.
