Tender pasta parcels stuffed with a savory beef and pork filling are a beloved Russian comfort food that rewards the effort of folding each one by hand. Jump to recipeMake the dough by combining flour and salt in a large bowl. Create a well in center and add egg, warm water, and oil. Mix until dough forms, then knead on floured surface for 8-10 minutes until smooth and elastic.
Wrap dough in plastic wrap and rest for 30 minutes at room temperature.
For filling, combine ground beef, ground pork, minced onion, garlic, salt, pepper, and cold water. Mix thoroughly until well combined and slightly sticky.
Roll dough on floured surface to 1/8-inch thickness. Cut into 3-inch circles using a round cutter or glass.
Place 1 teaspoon of filling in center of each circle. Fold dough over to create half-moon shape, pinching edges firmly to seal.
Bring the two corners of the half-moon together and pinch to form the classic pelmeni shape.
Bring a large pot of salted water to boil. Add pelmeni in batches, stirring gently to prevent sticking.
Cook for 8-10 minutes until pelmeni float to surface and dough is tender.
Remove with slotted spoon and serve immediately with sour cream, fresh dill, and melted butter.
