Shepherd's Pie

Ingredients

• 1 tbsp olive oil
• 1 medium onion, diced
• 2 cloves garlic, minced
• 1 medium carrot, diced
• 1 rib celery, diced
• 1 lb ground lamb or beef
• 1 tbsp tomato paste
• 1 cup beef broth
• 1 tsp Worcestershire sauce
• 1/2 tsp dried thyme
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/2 cup frozen peas
• 1/2 cup frozen corn
• 1 1/2 lbs potatoes, peeled and cubed
• 1/4 cup milk
• 2 tbsp butter
• Salt and pepper to taste

Instructions

1. Preheat oven to 400°F (200°C).
2. In a pot of salted water, boil potatoes until fork-tender, about 15 minutes. Drain and mash with milk, butter, salt, and pepper until smooth. Set aside.
3. In a skillet, heat olive oil over medium heat. Sauté onion, garlic, carrot, and celery for about 5 minutes.
4. Add ground lamb or beef and cook until browned. Stir in tomato paste, Worcestershire sauce, broth, thyme, salt, and pepper. Simmer for 10 minutes.
5. Stir in peas and corn.
6. Spread the meat mixture evenly in a baking dish. Spoon mashed potatoes on top and smooth them out. Use a fork to create ridges on the surface to help it brown.
7. Bake for 20–25 minutes or until the top is golden brown. Let rest 5 minutes before serving.
