Tender, smoky chicken gets a flavor boost from a bold spice rub featuring paprika, cumin, and garlic that creates an irresistible crust. Hours of slow smoking transform the meat into pure comfort, falling off the bone with rich, complex barbecue flavor. Perfect for weekend gatherings or when you want to impress friends with that authentic smoky taste.

Combine all rub ingredients (sea salt, black pepper, garlic granules, onion granules, paprika, cumin, brown sugar, and sugar) in a bowl and set aside.
Add the apple juice, apple cider vinegar, and water to a spray bottle and shake to combine. Set aside.
In a small saucepot, combine the BBQ sauce, melted butter, and 1 cup of the spritzer mix. Keep warm over low heat.
Rub the olive oil all over both sides of the chicken halves, creating a thin layer.
Generously season the chicken on both sides with the rub. There will be 2-3 tablespoons leftover.
Place the chicken in the smoker and cook for 1 hour. Spray the chicken with 4-5 sprays of the spritzer, then continue spraying every 20-25 minutes until the internal leg temperature reaches 150°F to 155°F.
Brush the chicken with the BBQ sauce mixture and continue smoking until the internal leg temperature reaches 165°F.
Remove from the smoker and let rest for 20-30 minutes before serving.
Serve alongside extra BBQ sauce.
