Smoked Chicken BBQ

Ingredients

• 4 tbsp sea salt
• 2 tbsp black pepper
• 2 tbsp garlic granules
• 2 tbsp onion granules
• 2 tbsp paprika
• 2 tbsp cumin
• 2 tbsp brown sugar
• 1 tbsp sugar
• 1 cup apple juice
• 1 cup apple cider vinegar
• 1 cup water
• 1 cup BBQ sauce
• 1 stick unsalted butter, melted
• 2 whole chickens, cut in half with back strap removed
• 2 tbsp olive oil

Instructions

1. Preheat the smoker to 250°F.
2. Combine all rub ingredients (sea salt, black pepper, garlic granules, onion granules, paprika, cumin, brown sugar, and sugar) in a bowl and set aside.
3. Add the apple juice, apple cider vinegar, and water to a spray bottle and shake to combine. Set aside.
4. In a small saucepot, combine the BBQ sauce, melted butter, and 1 cup of the spritzer mix. Keep warm over low heat.
5. Rub the olive oil all over both sides of the chicken halves, creating a thin layer.
6. Generously season the chicken on both sides with the rub. There will be 2-3 tablespoons leftover.
7. Place the chicken in the smoker and cook for 1 hour. Spray the chicken with 4-5 sprays of the spritzer, then continue spraying every 20-25 minutes until the internal leg temperature reaches 150°F to 155°F.
8. Brush the chicken with the BBQ sauce mixture and continue smoking until the internal leg temperature reaches 165°F.
9. Remove from the smoker and let rest for 20-30 minutes before serving.
10. Serve alongside extra BBQ sauce.
