Strawberry Waffles

Ingredients

• 2 cups flour, plus 3 tbsp for coating berries
• 1 tbsp light brown sugar
• 4 tsp baking powder
• 1 1/2 cups whole milk
• 2 eggs
• 1/2 cup melted butter
• 1 tsp vanilla extract
• 1 cup diced strawberries
• Cooking spray or butter for greasing

Instructions

1. Preheat your waffle iron according to the manufacturer's directions.
2. In a medium-sized bowl, whisk together the 2 cups of flour, light brown sugar, and baking powder.
3. Add the whole milk, eggs, melted butter, and vanilla extract to the bowl and whisk to make a smooth, thick batter.
4. In a separate small bowl, toss the diced strawberries with the extra 3 tbsp of flour. Then, gently fold the floured berries into the waffle batter, stirring them in just a bit. Try not to overmix or the juice from the berries can turn the batter pink.
5. Open your hot waffle iron and spray it with a little cooking spray or grease it with some butter.
6. Scoop about 1 cup of waffle batter into your waffle iron, close it up, and cook until the waffle is golden brown. The amount of batter and cooking time will depend on your specific waffle maker.
7. Serve the warm strawberry waffles with syrup, whipped cream, or extra fruit on top.
