In a medium-sized bowl, whisk together the 2 cups of flour, light brown sugar, and baking powder.
Add the whole milk, eggs, melted butter, and vanilla extract to the bowl and whisk to make a smooth, thick batter.
In a separate small bowl, toss the diced strawberries with the extra 3 tbsp of flour. Then, gently fold the floured berries into the waffle batter, stirring them in just a bit. Try not to overmix or the juice from the berries can turn the batter pink.
Open your hot waffle iron and spray it with a little cooking spray or grease it with some butter.
