Delicate Dover sole cooked gently in a toaster oven or air fryer with butter, garlic, and lemon, ready in about 15 minutes. An elegant fish dinner with an optional lemon-caper butter.
Jump to recipePreheat. Set the air fryer or toaster oven to 375 F. Lightly oil a small baking tray, air-fryer pan, or piece of foil.
Dry and season. Pat the sole very dry. Place skin-side down if the skin is attached. Brush with melted butter or olive oil, then season with salt, pepper, paprika, and garlic.
Cook. Air fry for 6-8 minutes, or bake in the toaster oven for 7-10 minutes. Do not flip. Very thin fillets may be ready sooner.
Check doneness. The fish should be opaque, flake easily, and reach about 140-145 F in the thickest part. Remove promptly because sole dries quickly.
Finish. Squeeze lemon over the fish. Add parsley, capers, and a small pat of butter. Serve immediately.
