A bright, garlicky Argentinian herb sauce of parsley, oregano, red wine vinegar, and olive oil for steak, chicken, seafood, or vegetables. Hand-chopped and rested so it stays loose and spoonable.
Jump to recipeFinely chop the parsley, garlic, and fresh oregano by hand. Hand chopping gives the sauce a better texture than blending.
Combine the herbs, garlic, red pepper flakes, salt, and black pepper in a bowl.
Stir in the red wine vinegar and optional lemon juice.
Slowly stir in the olive oil until evenly combined. Chimichurri should remain loose and spoonable, not emulsified like mayonnaise.
Let stand for at least 20 to 30 minutes before serving so the flavors can meld. Taste and adjust salt, vinegar, or heat.
