Jump to recipeHeat milk, cream, and half the sugar in a heavy saucepan over medium heat, stirring until sugar dissolves. Add vanilla bean pods and seeds.
In a bowl, whisk egg yolks with remaining sugar until pale and thick, about 3 minutes.
Slowly pour hot milk mixture into yolks, whisking constantly to prevent curdling.
Return mixture to saucepan and cook over low heat, stirring constantly with a wooden spoon, until it coats the back of the spoon (170°F).
Strain custard through a fine-mesh sieve into bowl. Stir in vanilla extract and salt. Remove vanilla pods.
Cover with plastic wrap directly touching surface and refrigerate at least 3 hours or overnight.
Churn in gelato machine according to manufacturer's instructions until thick and creamy, about 20-25 minutes.
Transfer to airtight container and freeze for at least 1 hour before serving for best texture.
