Peri Peri Prawns

- 2 lbs large prawns, peeled and deveined
- 6 red bird's eye chilies, roughly chopped
- 4 garlic cloves, minced
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh cilantro, chopped
- 1 lemon, cut into wedges

In a food processor, combine chilies, garlic, olive oil, red wine vinegar, lemon juice, paprika, oregano, ginger, salt, and black pepper. Blend until smooth to create peri peri sauce.

Place prawns in a large bowl and pour three-quarters of the peri peri sauce over them. Toss to coat evenly and marinate for 15 minutes at room temperature.

Heat a large skillet or grill pan over medium-high heat.

Remove prawns from marinade and cook for 2-3 minutes per side until pink and cooked through.

Drizzle remaining peri peri sauce over cooked prawns and garnish with fresh cilantro.

Serve immediately with lemon wedges on the side.
